For almost two years, my husband and I have been pescetarians, that happy place between carnivore and vegetarian, where we only cut land animals from our diets. What can I say? We live in Baltimore, off the Chesapeake Bay with some of the best seafood in the Mid-Atlantic. I couldn’t give up my Mayland blue crab.
But as expensive as seafood can be, especially for a family of four, we often enjoy vegetarian meals.

This is my vegetarian version of tikka masala. The great thing about this dish is that I can use store bought masala sauce (I always use Patak’s Tikka Masala Curry when I’m short on time) and any leftover vegetables I have on hand. Pair this dish with jasmine rice and naan bread for a quick, inexpensive and delicious meal your entire family will enjoy.
