This is my vegetarian version of tikka masala. The great thing about this dish is that I can use store bought masala sauce (I always use Patak’s Tikka Masala Curry when I’m short on time) and any leftover vegetables I have on hand. Pair this dish with Jasmine rice and naan bread for a quick, inexpensive and delicious meal your entire family will enjoy.
